If the children at your home are reluctant to eat vegetables and are very picky, then you will have to struggle a lot to find recipes for their lunchbox. Although children do not like vegetables, but if the seasoning of cheese is added to them then the taste as well as nutrition in the recipe increases. Today we have brought some such recipes of paneer for your children, in which you can serve them taste as well as nutrition.

Paneer Kathi Rolls:

Material:

  • 400 grams paneer (cottage cheese), chopped into strips
  • 4 wheat flour rotis
  • 8-10 onion rings
  • 1 chopped green chilli
  • 1 tablespoon vinegar
  • 1 tablespoon oil
  • 1 medium chopped onion
  • 1 medium chopped tomato
  • ½ tsp ginger-garlic paste
  • ½ tsp red chilli powder
  • ¼ tsp turmeric powder
  • ¼ tsp garam masala powder
  • 3 tbsp thick curd
  • Mayonnaise as required
  • Green chutney as required
  • To sprinkle chaat masala

Method of making:

1. Mix round chopped onion and green chillies with vinegar and keep aside.

2. Heat oil in a nonstick pan. Add chopped onion and fry until golden brown. Add tomato and cook until it becomes soft.

3. Add ginger garlic paste, red chilli powder, turmeric, cheese pieces and fry. Add garam masala powder and curd. Mix well and cook for 2-3 minutes.

4. Take a roti and apply some mayonnaise and green chutney on it.

5. Put a little cheese mix on the roti and add onion-chilli mix in the middle. After this sprinkle chaat masala and make a roll tightly.

Paneer Nuggets:

Material:

  • 200 grams cheese
  • 2 tbsp soy sauce
  • 2 tbsp red chilli sauce
  • 2 teaspoons ginger-garlic paste
  • crushed black pepper as per taste
  • salt to taste
  • flour for sprinkling
  • panko crumbs for coating
  • Cornflour solution for dipping
  • Oil for deep-frying

Method of making:

1. Cut the paneer into ½ inch cubes.

2. Mix soy sauce, chili sauce, ginger-garlic paste, crushed black pepper and salt together in a bowl. Add paneer pieces and mix well.

3. Sprinkle flour on the cheese pieces, wrap them in panko pieces and dip them in the cornflour solution. Repeat the process one more time.

4. Heat oil in a pan. Deep fry the paneer pieces until they turn golden brown. Remove on absorbent paper.

5. Serve hot with sweet chili sauce.

Paneer Cutlets:

Material:

  • 200 grams cheese
  • 2-3 medium potatoes, boiled and peeled
  • 1-2 chopped green chillies
  • 2 tbsp chopped fresh coriander
  • 1 medium chopped onion
  • ¼ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1 teaspoon paneer masala
  • salt to taste
  • ½ cup fresh bread crumbs
  • oil for frying
  • green chutney for serving

Method of making:

1. In a large bowl, mix together potatoes, green chillies, coriander, onion, turmeric powder, red chilli powder and paneer masala. Add salt to it and grate cheese. Add bread crumbs and mix well.

2. Divide the cheese mix into equal parts and shape each part into a cutlet.

3. Heat oil in a pan. Drop the prepared cutlets into hot oil. Fry until golden and crisp. Take out on absorbent paper.
